Since the Kanban board will basically be open indefinitely, as it does not run on a sprint schedule, when you click "View Closed Items," it will open everything, forever. I'm not sure what the solution is here, but maybe some kind of filter for closed items or a search or a "last n days" kind of thing. I just don't want to go back to look for something and have to sort through 250 items to find the thing I need.

I've worked round this by using a Sprint schedule and then just moving any non-closed items forward to the next sprint at the end of the schedule.
That way you don't hit the issue of too many closed items, and also get to use the velocity as a measure which can be useful.
What Toni mentions is a popular approach. More of a Scrum-ban approach to the board.
Yes, but the ability to show closed items should still be available. Users need flexibility, not to be forced into taking a Scrum-ban approach.
Closed items are available via filtering as of the Summer '11 Release: http://community.versionone.com/Release%20Notes/ReleaseNotes2011Summer.aspx
