When creating a new backlog item, the Product Owner field is always empty. It would be nice to fill it with a default Product Owner name that would have been set up in the project properties.

You could use a template as well, but this is indeed one of these little features that should be handled differently.
Would love this!
This can be achieved now as follows: 1) via the Teamroom. The Teamroom properties can now set a "default Product Owner" value. Then when adding a new backlog item in the Teamroom, the new backlog item's Product Owner field will pre-populate based on the properties setting for Product Owner for the Teamroom. --or -- 2) From the Backlog data grid, first filter the grid by Product Owner. While this filter is applied then any new backlog items added will default to the value of the applied filter. (Tip: Save a view setting to include filter settings to default values desired when creating new backlog item)
