We have had requests internally for custom fields that could be placed on Epics, and not on stories for release planning purposes. The reason would be to avoid accidental population of this field on a story level. Currently whatever you customize on a backlog item, the field is available on both story and epics. Perhaps if visibility of fields between an Epic and Backlog item can be controlled independently, it would also address the request.
